Filler words and false starts are removed and the result is broken into paragraphs, so "um so I think we should like move the call uh to Friday" arrives as clean text. Custom vocabulary handles the things a general model gets wrong — a name spelled like "catherine" versus "Kathryn", or the way you type your own email address.
